POTATO SALAD
COOKING TIME: 10 – 16 MIN (depending on microwave wattage)
STANDING TIME: 10 MIN SERVING: 8 PERSONS
INGREDIENTS
1 – 5 kg baby potatoes
3 eggs
¼ cup mayonnaise
¼ cup Greek salad dressing
GARNISH (optional)
1 tbsp chopped parsley
1 tbsp crispy onions
PREPARATIONS
2 ml salt and pepper (to taste)
1 small red onion, chopped
2 gherkins, sliced
1 tsp chopped chopped chives
1 tsp lemon zest
1. Place baby potatoes in the Microwave Rice Maker along with the
eggs. Fill with water to the maximum fill line.
2. Cover with insert and cover and microwave @ 900 watts for 5 – 8 min
3. Remove the eggs and continue to microwave the potatoes for another
5 – 8 min (check that potatoes are cooked through).
4. Once cooked, drain the water and allow the potatoes to cool and cut
in half.
5. Peel and quarter the boiled eggs.
6. In a That’s A Bowl mix the mayonnaise and dressing and fold into the
baby potatoes, eggs, chives, gherkins and red onion.
7. Season to taste with Salt & Pepper
8. Garnish with parsley, crispy onion and lemon zest if desired.
